MIAC visits The Fat Duck and the University of Oxford

At the beginning of March the students and the Coordination of the Master in Innovation in Culinary Arts visited the renowned English restaurant The Fat Duck in Bray. The visit to the various structures and departments of this three-star Michelin restaurant was carried out as a pilot experience at a time when the group of Heston Blumenthal is looking for a straighter collaboration with educational institutions. At the University of Oxford, they participated in a seminar by Professor Charles Spence on gastrophysics issues, discussing the themes worked on this academic year by these first year students.
